Northland Seed Varieties Approved for Use in EU

Ribus Offers Alternative to Lecithin

In response to concerns about genetically modified lecithin, Ribus has developed Nu-Rice as its alternative to soybean lecithin. Organic Nu-Rice is a spray-dried, water extract of rice bran previously stabilized through a protease treatment. It is rich in glycolipids with the ability to bind water and oil, as well as the ability to entrain air, not unlike lecithin. As such, Nu-Rice can replace lecithin in all but high temperature (frying) applications. It is currently used in extruded cereals, pasta and snacks and as functional ingredients in bakery applications.
